The sweet shrimp is a type of sea creature in the Animal Crossing series introduced in Animal Crossing: New Leaf.
While initially absent from Animal Crossing: New Horizons, the sweet shrimp was added in the 1.3.0 Free Summer Update in July 2020, where it appears from 4 PM to 9 AM as a small, slow shadow from fall to the end of winter.

Donating to the museum
In New Leaf
When donated to the museum, it is found on the primary tank in the first room of the fish exhibit, in the northeast portion of the tank. The information board in the aquarium will list information about this sea creature:
"Also called "northern shrimp," they have a life span of about 5 years, in which they are male for half. After that time, the shrimps change genders and become females, a rather unique feature of the species. The females are a popular sashimi dish, but they don't instantly have their characteristic sweetness. That sweetness actually comes out after they're left to sit for a day, making them a dish of patience."
In New Horizons
When donating to the museum, Blathers will say the following:
"The sweet shrimp spends the first few years of its life as a male. It then transitions into a female as it ages. Interestingly, it is hardly alone in the type of development cycle. Indeed, a great variety of marine creatures can change their biological sex as they age. Clown fish, some sea stars, and sea bass are among them. Hoo hoo, the ocean is full of a great many wonders. Huzzah to that, I say!"
Once donated, the sweet shrimp can be seen in the icy waters tank alongside the sea urchin and the scallop.
Fishing Tourney
In New Leaf
During a Fishing Tourney, when given a sweet shrimp, Chip will not score the sea creature but will say the following:
"Sweet shrimp make great sashimi, but try 'em deep fried as soon as you get the chance! Me? I'm just gonna gulp 'em down as they are now! YUM!"
