The two confirmed dodos are Orville and Wilbur, both of whom are special characters who work at Airport. - The existence of other dodo characters is implied by Orville in conversation. If the player uses the island designer app while trying to open the airport gates or go on a flight, Orville will close the player's app and mention that dodos from other airports make fun of them if they forget this step.
